The BEST Italian Pasta Salad recipe is easy to make it.

Ingredients

  • Add Meat/Protein: Add cooked chopped ham or chicken.
  • Veggie Substitutions: Add chopped bell pepper, shredded carrot, or cooked sautéed veggies, like zucchini, asparagus, broccoli, or any other veggies you like.
  • Meatless Italian Pasta Salad: Leave the meat out and add extra vegetables.
  • Swap the Noodles: Use farfalle, penne, or any favorite bite-size pasta.
  • Gluten Free: Use your favorite gluten free bite size pasta noodles. We have had great luck with the Barilla rotini pasta.

For the salad:

250 g      Penne or other pasta of your choice

50g         pine nuts

arugula

100 g      Tomato(es), dried in oil

200 g      Mozzarella

150g       Parma ham

salt and pepper

For the dressing:

70ml      Extra virgin olive oil

3 tbsp    Balsamic vinegar, lighter or darker, depending on your taste

1 clove/s garlic

1 teaspoon Pesto

1 teaspoon Mustard

1 teaspoon honey

For garnish:

Parmesan, freshly grated.

preparation

The noodles should be boiled before being cooled off. In a pan without any oil over medium heat, lightly toast the pine nuts.

 The arugula should be thoroughly washed, spun dry, and chopped. Like the mozzarella and the Parma ham, the sun-dried tomatoes should be thoroughly drained and sliced into little pieces. Put everything, along with salt and pepper, in a big bowl.

Just before serving, drizzle the salad with a dressing made of oil, vinegar, honey, mustard, pesto, and a garlic clove that has been finely minced or pressed. After thoroughly combining everything, top with grated parmesan.
