Black Strawberry Tomato Gazpachoimage 209

 

Ingredients

strawberries, 200 g

Dark red tomato(es), eighth

4 green cardamom pods

2 tablespoons Aceto balsamic

6 tbsp olive oil

1 tsp. of honey

2 dried chilli peppers

1 basil bunch

4 toast slices

Pepper and salt

Preparation

In a pan without fat, toast the cardamom pods and split them open. Lightly crush the seeds.

Strawberry trimming and washing. The tomatoes should be chopped roughly once the stalks are removed. Strawberries, tomatoes, cardamom seeds, balsamic vinegar, two tablespoons of extra virgin olive oil, and honey should be finely pureed. The soup should be strained through a sieve before being seasoned with salt, pepper, and the crumbled chilli peppers.

Toast should be diced, fried in the remaining olive oil until crispy, and its crust removed. To drain, lay briefly on kitchen paper like Black Strawberry Tomato Gazpacho.

Add basil and croutons to the soup just before serving.
